Corned beef has the best leftovers

The best part about making corned beef for St. Patrick's Day (well besides the corned beef on St. Patrick's Day) were reubens on Saturday for lunch!


We had about 2 lbs. of corned beef left over, even after the reubens, so I wrapped it up tight and put it in the freezer to save for this upcoming weekend.  My brother and his wife, and my parents are in town, so we'll be making reubens for them on Saturday for lunch.  Home corned beef, homemade kraut, and maybe some homemade rye (if we're feeling ambitious, but I don't even know what all goes into baking a loaf of rye).  

I so love leftovers!
